Jastor reimagined Pollos & Jarras, bringing the vibrant spirit of Lima’s streets and markets to Miami through a full-scale brand transformation. Breaking from the conventional aesthetics of Peruvian restaurants, we sought to capture the energy, color, and movement of Lima’s street life. To ground the brand in authenticity, our team immersed ourselves in the city, walking its streets, engaging with local cooks, and observing the rhythms of markets and street vendors.

This immersive research informed every aspect of the rebrand, ensuring that the visual identity and brand experience felt genuine, rooted in culture, and true to the essence of Peruvian street food.
The creative work encompassed a complete visual identity overhaul, including a new logo, color palette, typography, photography, and imagery, alongside digital presence enhancements, packaging, uniforms, and collateral materials.

The rebrand has allowed the restaurant to deepen connections with loyal patrons, attract new diners, and position itself as a destination for cultural and culinary experiences in the city. By infusing strategy, design, and storytelling, Jastor helped Pollos & Jarras evolve from a local favorite into a vibrant culinary landmark that celebrates Peru’s street food culture while appealing to a modern, experience-driven audience.
